By far probably one of my favorite food items to eat! If I had a choice I would eat this or some form of fried chicken everyday. There is just something satisfactory about homemade fried chicken! You can add whatever spices and ingredients you want.
Ingredients: 1 cup flour, 1 cup panko crumbs, 4 chicken thighs, 6 chicken legs, 3 Tbsp chalula hot sauce, 3 cups buttermilk, 1/4 cup salt, 3 Tbsp smoked paprika, 3 Tbsp ground black pepper, 2 Tbsp ground thyme, 1 Tbsp ground cumin, 1 Tbsp ground corriander, and 2 Tbsp cayenne.
For the egg wash: 2 eggs, 1 cups of milk
First marinade the chicken pieces in buttermilk and chalula for no less then 3 hours.
Heat oven to 425. Pour the chicken and buttermilk mix into a pan and bake for about 1 hour (you want to par-back them so that you know they are cooked all the way through when you fry them!) Let cool
In a cake pan, mix together all the dry ingredients.
In another pan mix together the egg wash.
Heat fryer (or pan full of oil) to 350 degrees.
Once the chicken is out of the oven and cooled, dip in the egg wash then transfer and dredge (cover) in the flour mixture. place in the oil for about 7 minutes and the breading is golden brown! Place on a plate covered in paper towel to catch the excess oil and sprinkle with a little more salt.
Mmmm these chickens were so moist and crunchy that in a way it kind of reminded me of shake-n-bake but 100x better! Not spicy so I would add more cayenne to the flour mix but that is completely up to you.
