Gumbo

I really wanted to make gumbo for family meal (of course it wouldn’t be New Orleans style) but my own version! It turned out really good though. Just remember that this recipe was meant for a large group of people, so it would be amazing for a get together for your own family and friends.

Ingredients: 2 cups flour, 2 cups butter, 8 cups chicken stock, 2 green bell peppers (diced), 1 bag of frozen cut okra, 1/2 cup chopped green onions, 4 Tbsp tabasco sauce, 3 Tbsp tomato paste, 12 cajun andouille sausages, 5 chicken breasts, 3 cups of rice, and salt & pepper to taste.

First sear the sausages in one pan and sear the chicken breast in another until golden brown on both sides.

In a large stock pot melt down the butter and whisk in the flour. Cook this mixture until it is a coffee color (this is called a cajun roux). The minute it hits that color, whisk in the vegetables. Stir in the tomato paste, then pour (while whisking) in the chicken stock. Bring up to a boil for about 5 minutes then turn down to a simmer and let cook for about an hour.

Cut the sausage into discs, and the chicken into medium sized cubes. Add into the gumbo while it’s still cooking for that hour. start cooking the rice after about half an hour.

After the hour is up add in the tabasco and seasonings to the gumbo.

This recipe was really tasty and for only being my second time making gumbo it turned out really well!
