Enchilada Pie

Well I made family again (as always) and today I went mexican and made Enchilada Pie! The idea was given to me by my co-worker and it actually turned out really well!

Ingredients: 1 bag of 24 corn tortilla’s, 5 chicken breasts (cut into small cubes), 1 medium can of enchilada sauce, 2 cans of pinto beans, 12 slices of provolone (cut into small cubes), and 12 slices of american cheese (cut into small cubes).

First saute the chicken in a saute pan.

Heat oven to 400 degree’s.

In a casserole pan put a thin layer of enchilada sauce. Place a layer of tortilla’s over that and layer on half the cheese, chicken, and beans. Place another layer of tortilla’s and repeat the process. Top with one last layer of tortilla’s and cover with the rest of the enchilada sauce and left over cheese! ENJOY!!

This was really good, and extremely comforting on a nice rainy day like today!  Every body enjoyed it and I know your family will too!
