Muffin Cookies

Today’s recipe is more of a breakfast item. I wanted to make muffins, but not just any ordinary muffins, I wanted to make muffin cookies. I made mine in the shape of a bar because I just recently picked up a “snack bar pan” from William & Sonoma. But you can make yours look like regular cookies and they’ll be just as special.

Ingredients: 2 cups Cake flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 2 Tbsp cinnamon, 1 Tbsp vanilla, 1 egg, 1 cup Milk, 1/3 cup Oil, 2 Tbsp Sour Cream, and 3/4 cups Sugar

Heat oven to 400 degree.

First in a mixing bowl, beat together the oil, milk, vanilla, and egg until completely combined. Then add all the other and mix on medium speed for 30 second. Take a baking sheet and drop the batter with a spoon to make the cookie shapes. Bake from 7 – 8 minutes and let cool.

Now if you wanna add chocolate chips or something of the sort just add them in. You don’t have to change the recipe at all!

These are the ultimate dunking cookie! I mean sure they’re great by themselves, but just try dunking them in coffee or a black tea and they would be AMAZING!
