Pita Bread

I am still determined to make homemade gyros, and to start I’m going to make Pita Bread!

Ingredients: 14 oz water, 1 oz yeast, 1lb 4 oz bread flour, 4 oz whole wheat flour, .5 oz salt, .67 oz sugar, 3 oz plain greek yogurt, and 1 oz olive oil.

Heat oven to 500 degree’s (no less). If you wanted to you could heat up a cast iron pan and do the pita’s one at a time (just make sure the pan is super hot before each pita is placed into it).

First mix all the ingredients together in a large bowl. Then let sit for an hour and a half to double in size in a warm place until it doubles insize (place a towel over the top of the bowl). Next scale out 3 oz (90g) rounds of dough and let rest on the counter for another hour. With a rolling pin, roll out the dough to 4-5 inches in diameter.

Place the stretched out dough on a sheet tray that has parchment on it. Bake until golden brown (about 3  – 5 minutes on one side) the flip and cook for 1 more minute.

Don’t let the pita over cook other wise the bread will be dry and stiff as a board. Let the soft pita’s cool the eat them!

I love pita bread so much I could eat it daily. To me Pita goes with anything you put on it!
