Dutch Apple Pie

I love Dutch Apple Pie! The streusel topping is my favorite part of it too. I’ve never made apple pie before, but since 4th of july is next weekend I thought why not make mini pies for the family?! So here is my recipe, with an added butterscotch sauce to drizzle over the top for extra flavor!!

Ingredients:

Pie Dough: 1.5 cups cake/pastry flour, 3 Tbsp shortening, 1/3 cup ice cold water, 2 tsp sugar, and 1/8 tsp salt

Filling: 1 large granny smith apple (cut into small slivers), 1/8 tsp salt, 1/4 tsp lemon juice, 3 Tbsp brown sugar, 3 Tbsp flour, 1 Tbsp white sugar, 1/2 tsp cinnamon, and 1/4 tsp nutmeg

Streusel Topping: 1/4 cup sunflower seeds (roasted and salted), 2 Tbsp flour, 2 Tbsp white sugar, and 2 Tbsp butter

Bourbon Butterscotch Sauce: 1 cup packed brown sugar, 2 Tbsp water, 3/4 cup heavy whipping cream, 1 Tbsp vanilla, 6 Tbsp butter (cut into small cubes), 1/4 cup bourbon, and 1/4 tsp salt

First, in a robo-coup combine the shortening and flour, pulse until incorporated. In a small cup combine the water, salt, and sugar. Run the robo-coup and drizzle in the water mixture until dough forms and springs back to the touch. Place in a small bowl and let rest in the fridge for at a minimum of 30 minutes.

While the pie dough is resting, grab a medium sauce pan to make the butterscotch sauce.

In the sauce pan, bring the water, brown sugar, and butter to a boil whisking  every so often. Once the sugar mixture is at a rolling boil add in the vanilla, bourbon, and cream. Bring to another boil, while whisking every so often, and continue to cook for another 5 minutes to deepen the flavor and color (the sauce will “burp” at you so just continue whisking). Place in a clean bowl and let the sauce cool.

Roll out and shape pie crust to a medium size circle (big enough to fill a cupcake mold). Par-bake the pie crust at 375 degrees for 10 minutes (poke the sides and bottom of the crust with a fork or use pie weights or beans as so the crust wont puff up).

Combine everything for the filling together.

Once the crust is par-baked, continue to place the filling inside.

In a robo-coup mix together all the ingredient for the streusel until completely combined. Sprinkle over the pie’s and continue to bake at 375 degrees for another 2

0 minutes. Let cool, drizzle the butterscotch over the pie’s and ENJOY!

Now what’s apple pie without some vanilla ice cream?! I’ll tell you….AMAZING!!!

Now for the streusel topping you could use oats but I wanted to do something different and use sunflower seeds since I already had them in my cabinet.

Also remember I did make mini pie’s but this would work awesomely for a large Dutch Apple Pie.
