I know it’s been a while since I’ve posted, but I plan on posting every Monday.
This week I decided to make Peanut Butter Rice Crispy’s with a Chocolate Frosting. I remember having these when I was younger, eating these with my friends at pool parties! Ah those where the good ol’ days. Now I know almost everybody knows how to make rice crispy treats, but this is my recipe.
Ingredients: 1 box rice crispy’s, 1.5 bags of marshmellows, 8 Tbsp butter, 3/4 cup peanut butter, 1 bag chocolate chips, 8 oz heavy whipping cream, 4 Tbsp butter (cut into small cubes), and 1tsp vanilla
In a double boiler, heat up the cream till it’s warm to the touch. slowly stir in the chocolate chips until blended and you make a chocolate sauce. Add in the butter, a little at a time until the butter is completely melted. Stir in the vanilla. Let cool.
Spray a cake mold with non-stick spray.
In a large pot, melt the butter. Mix in the mashmellows until melted and stir in the peanut butter. Stir in the rice crispy’s and transfer to a cake mold and press down.
Once the chocolate sauce is cooled and thick, spread over the rice crispy’s. It will melt down into the treats, but that’s ok. Since the treats aren’t that sweet, the chocolate will help sweeten them!
Cut to the desired size and ENJOY! Peanut butter and chocolate…what could be better?!
