Cannolis

I recently moved to Denver and my apartments are right next to a small Italian restaurant that has the best cannolis that I’ve ever had! I’ve been wanting to make cannolis myself but I just never did, but here is my recipe.

Ingredients: 3 cups all-purpose flour, 1/4 cup white sugar, 1/4 teaspoon ground cinnamon, 3 tablespoons shortening, 1 egg, 1 egg yolk, 1/2 cup sweet Marsala wine, 2 Tbsp vanilla, 1 tablespoon apple cider vinegar, 2 tablespoons water, and 1 egg white

Filling: 1 (32 ounce) container ricotta cheese, 1/2 cup confectioners’ sugar, 4 ounces semisweet chocolate (chopped)

Sift the flour, sugar, and cinnamon together in a robocoup. Pulse in the shortening untilthe dough looks mealy. Pour into a mixing bowl.

Add in the egg, egg  yolk, marsala, vanilla, vinegar, and water and mix. Take out onto a floured surface and knead until the dough is smooth (add more water if too dry). Place the fridge (covered) for about 1 hour.

Heat fryer to 375 degree.

With a pasta sheeter, sheet out to about the 3rd to last setting. With a round cookie cutter cut circles out of the dough. flour both sides and roll around the cannoli tubes.  With the egg white, brush or use your finger  and seal the dough with the egg white. Place in the oil and cook until golden brown.

Let cool on paper towl.

Whip all the filling ingredients together until smooth. With a pipping bag or a zip lock bag with the corner cut out of it, fill the cannolis. With some extra chocolate chips coat the ends. NOW ENJOY!
