I ABSOLUTELY LOVE AU GRATIN POTATOES! And the BBQ place in town has inspired me to make my own. Instead of using russet potatoes, I decided to use yukon gold because they’re more buttery and (I believe) flavorful.
Ingredients: 8 medium sized yukon gold potatoes (shredded), 16oz triple cheddar cheese mix, 1 medium onion minced, 3 cloves of garlic minced, 2 Tbsp flour, 1/4 cup flour, 2 cups milk, 1 Tbsp salt, and 1/2 tsp ground pepper
First heat the oven to 350 degrees.
Using a food processor and the shredder attachment, shred the yukon gold potatoes. Place in an un-greased casserole pan.
In a medium sauce pan, melt the butter and saute the onions and garlic. After 5 minutes add the salt, pepper, and flour. Cook for another 5 minutes then add the milk. Bring to a boil stirring frequently. Sprinkle in 12oz of the cheese stirring constantly. Pour the mixture onto the potatoes and mix until completely coated. Place in the oven and cook for 45 minutes.
Once the 45 minutes is up, sprinkle the rest of the cheese over the potatoes. Turn the oven to 375 degrees and cook for another half hour.
Pull out of the oven and let sit for 5 minutes. Then ENJOY!
These potatoes are AMAZING! I plan on making them more often. These would be great for a picnic or for any type of dinner you can think of.
