Sweet Potato Brioche

In recent years I’ve really started to like yams and sweet potatoes. Especially Yams! And I had recently bought some yams and haven’t had anything to do with them lately, so I decided to make brioche. We make sweet potato brioche donuts at my work, but I decided to make buns, because well buns go with everything you eat!

Ingredients: 14 grams active yeast, 2 cups sweet potatoes (about 2 medium sized yams), 1/2 cup milk, 2 tsp sugar, 4 Tbsp warm water, 12 eggs, 4 sticks of butter (cut into small pieces), 7 cups all purpose flour, 1 tsp salt, 4 Tbsp sugar

heat oven to 425 degrees. With a pairing knife poke slits all over the yams and roast for 45 minutes.

Let the yams cool to room temp, and puree in a food processor. Place 2 cups mashed yams into your kitchen aide and start mixing with the paddle attachment.

In a small bowl combine the yeast, warm water, and 2 tsp sugar.

To the mashed yams add in the eggs, milk, and yeast mixture. Mix in the flour, salt, and 4 Tbsp sugar. Once all is combined, mix on medium speed for 5 minutes. Cover with plastic wrap and let sit until the dough doubles in size. Mix in the butter pieces, 1/4 at a time. Place in the fridge until the dough is firm…about 2 days.

Once the dough is firm, punch down, cut into 1/3’s and make 3 different types of bread with it.

I made cinnamon bread, cinnamon rolls, and brioche buns.
Cinnamon bread: Roll out the brioche dough into a large rectangle. Make a sugar/cinnamon mixture. Melt a 1/4 cup of butter, brush onto the dough, sprinkle on the cinnamon sugar, and roll up and place into a greased bundt pan.
Cinnamon rolls: Do the same thing for the cinnamon bread, but after you roll the dough up, cut into 1 inch rounds and place into a greased cake pan.
Brioche buns: take the dough and roll into 2.5 oz rounds and place into either a greased baking pan or into a greased cupcake pan.

Before baking the dough though, let it rise for about half an hour. Then heat oven to 350 degrees. Bake for 25 – 30 minutes.

This is the first time I’ve made brioche and I like it! The bread is flaky and moist and DELICIOUS!
