At the end of every work day, we make family meal at the restaurant. So I made the meal last night and I have to say it was amazingly really good! I love fried rice, tofu is pretty good (if you know how to cook it correctly) and the 2 together make a perfect combination.
Ingredients: 1 cup of rice (cooked), 3 eggs (scrambled), 2 bell peppers (julienned), 1 large shallot (minced), 1/2 cup sliced crimini mushrooms, 3 cloves of roasted garlic, 1 block of soft tofu (cut into small cubs), 1 fennel bulb (thinly sliced), 2 zucchini (rough chopped), 1/2 a chicken (shredded), salt and pepper to taste, 1/2 cup soy sauce (split in half), and 4 Tbsp hoison
First cook the rice. This scramble the eggs.
In a pan heat up 1/4 cup of oil and saute the all of the vegetables. Add in the tofu and half the soy sauce. Add in the scrambled egg and chicken. Take off the heat and place in a baking pan.
In the same saute pan, saute the rice. Add the last half of the soy sauce and the hoisin. Saute for about 10 minutes. Take off the heat and toss with the veggie mix.
Place on the table and ENJOY! This family meal was amazing and everybody wanted seconds. I love making fried rice. It’s one of my favorite foods.
Now you can make this dish completely vegan or vegetarian or how ever you like it. I like tofu because it can take on the flavor of whatever it’s cooked or marinated with. Make this dish with the veggies and meats you love and it’s sure to be a hit with anybody.
