So I’m still on that healthy energy kick. My energy bars actually do work! I’m energized for the entire day and if I need a mid-day pick me up, I eat another one. Plus all my recipes are healthy for you.
Ingredients: 1 cup pecans (sliced), 1 cup gluten free oats, 1/3 cup sunflower nuts, 1/4 cup flax seed, 2/3 cup sugar, 1/4 cup agave, 4 Tbsp butter, 1/2 tsp salt, 1/2 tsp vanilla, 1/4 tsp cinnamon, 2 cups gluten free rice puff cereal, 1/2 cup dried cherries, and 1/4 cup goldenberries/gooseberries
heat oven to 400 degrees. Toast the pecans, sunflower nuts, flax seeds, and oats until golden brown. Let cool.
In a small sauce pan on medium heat mix together the sugar, agave, butter, and salt. Once a caramel color forms add the vanilla and turn off the heat.
In a food processor pulse together the toasted nuts and goldenberries (until coarse).
In a large bowl combine ALL the ingredients. Grease an 8×8 pan and press the mixture into it until all is even in the pan. Place parchment or non-stick foil over top for 2 hours to cool down. Cut into bars and enjoy every morning!
These bars are tasty! They do taste more like a granola bar, they’re hard, but sweet. And if you want to make them soft before you eat them, heat them up for 30 (I recommend this) and ENJOY!
