Well I’m sticking with my health kick and continuing with making homemade energy foods. My first batch Chocolate Goji energy bars were AMAZING! So I thought I would try a new recipe.
Ingredients: 1/2 cup Pistachio’s, 1/4 cup Pinenut’s, 1/4 cup Pumpkin seeds, 1/4 cup Sunflower nuts, 1/2 cup Oatmeal, 6 dried Peaches, 1/4 tsp Salt, 1/4 tsp Cinnamon, 1/2 tsp Vanilla, 1/2 cup Peanut butter, and 1 Tbsp Canola oil
Pre-heat oven to 350
In a food processor, combine the pistachio’s, pinenuts, pumpkin seeds, and sunflower nuts until crumbly (completely ground up but not a powder. Add in the dried peaches and oatmeal and pulse until the peaches are small in size. Pour the mixture into a mixing bowl and mix in the rest of the ingredients. Form into small cookies and cook for about 15 minutes.
Now these cookies are going to be crumbly and to fix that you can add in more oil if you wish, but then it wouldn’t be AS healthy.
