Ever since I came back from my trip to Israel and having my 14 hour flight layover in the Netherlands, I’ve had a huge craving for Croquettes! So i had some bacon and potatoes lying around and I thought why not make some.
Ingredients: 1 Lb yukon gold potatoes (peeled), 3 cups flour, half a package of bacon (cooked and chopped), 1 bag of cheddar, 1 Tbsp butter, 1 cup milk, 2 eggs (lightly beaten), and 1 cup panko crumbs.
First boil the potatoes until soft then make mashed potatoes with the butter and 1 cup milk.
While the potatoes are boiling, cook the bacon. Cool down the bacon and chop up into bits.
Once the potatoes are mashed, add the bacon, cheddar cheese, and 2 cups of flour. Roll into logs or balls and freeze for about an hour.
Heat fryer to 375 degrees, or fill a caste iron pan with oil into it with a thermometer in it to 375 degrees.
Once completely frozen, dip in the other last half of flour then dip in the eggs and lastly dip in the panko crumbs.
Fry until golden brown and enjoy!
For this being my first time making croquettes, I have to say they are delicious! Although they probably could use a nice sauce to go with them, they’re great by themselves.
