It’s been awhile since I’ve eaten chicken, so I went to the store and picked some up and I wanted something fattening so why not fry it! Since I don’t have a deep fryer, I’m oven frying and making homemade country gravy to go along with it.
Chicken: 6 Boneless chicken thighs, 4 cups flour, 2 cups panko bread crumbs, 5 Tbsp salt, 2 Tbsp ground pepper, 2 Tbsp chipotle powder, 2 Tbsp singapore seasoning, and 3 Tbsp garlic powder. Also fill a cake pan with 1/4 inch of oil
Egg wash: 2 eggs and 2 cups milk
Gravy: 2 cups flour, 4 oz bacon fat, 4 oz butter, 2 Tbsp salt, 1 Tbsp ground pepper, 1 tsp peri peri seasoning, 1 Tbsp garlic powder and 4 cups of milk.
Heat oven to 425
Chicken: Combine the flour, panko, and all the seasoning. Whisk together the egg wash.
Dredge the thighs in the flour, then the egg wash, and then the flour again and place in the cake pan full of oil. Bake in the oven for 20 minutes then flip all of the them and bake for another 20 minutes.
Gravy: In a sauce pan, melt the butter and bacon fat together. Add the flour and mix together and cook about 5 minutes (until all the flour flavor is cooked out). Whisk in the milk until thick. Add the spices, turn off the heat and cover.
Once the chicken is done cooking, take out of the oil and place on a paper towel to drain the oil from the meat. Place on a plate, top with the gravy and ENJOY!
