It’s been forever since I’ve written a post and I’m sorry about that. I was thinking about doing a stuffed rigatoni or cannoli’s but instead because the weather is getting colder and it is snowing here in the mountains of Colorado, I’ve opted for soup! I’ve chosen cheesy broccoli soup and instead of yellow cheddar, I’m using 3 different white cheeses. White cheddar, Asiago, and Manchego.
Ingredients: 4 cups chicken stock, 1/2 an onion (finely chopped), 3 heads of broccoli ( just the florets), 1/4 cup melted butter, 1/4 cup flour, 1 block white cheddar (cubed), 1 cup shredded Asiago cheese, 1 cup shredded Manchego cheese, 4 cups milk, 1 Tbsp salt, 1 Tbsp black pepper, a couple dashes worcestershire sauce
First heat the butter up and saute the chopped onion until translucent. Stir in the flour and form a blond rue (this takes about 1-2 minutes) and whisk consistently. Now gradually stir in the milk. Pour into the crock pot and set to low.
In a sauce pan, steam the broccoli for about 1 minute. Strain water and place in the crock pot as well. Add salt and pepper, worcestershire sauce, cover, and set the timer for 4 hours.
Add the cubed white cheddar, asiago, and manchego and stir until all is melted.
Add some other spices like I did. Such as: garlic powder, oregano, basil, frank red hot sauce, and chipotle powder. Just make it your own and how you want it to taste!
