While watching My Drunk Kitchen on youtube, I started to get a craving for coffee cake. And well with this rainy weather today in Aspen, what is there better to do than bake! Coffee cake is amazing especially if it has cream cheese as a filling or topping and then heated up for breakfast….mmmmm. It’s been a while since I’ve had or even made coffee cake and I decided to just go with the flow as usual and make my own recipe.
Cake: 1 1/2 cups cake flour, 2 Tbsp vegetable oil, 1/2 stick of butter (softened), 3/4 cup sugar, 2 eggs, 1 Tbsp apple cider vinegar, 1/2 Tbsp baking powder, 1 tsp baking soda, 1 tsp salt, 1/2 cup sour cream, and 2 Tbsp cinnamon.
Topping: 1 Tbsp cinnamon, 1/4 stick of butter (softened), 1 cup brown sugar, and 1 cup quick oats
Heat oven to 325 degrees
In a large bowl combine the flour, baking powder, baking soda, and salt.
Cream together the butter and sugar. Add the eggs 1 at a time until each is fully mixed into the batter. Pour in the vegetable oil. Mix in the flour mixture 1 spoon full at a time until all is incorporated. Mix in the cinnamon and lastly add the cider vinegar.
Spray the cake pan with baking spray and cascade the cake mix into the pan.
Mix together the topping ingredients and sprinkle over the cake mix.
Bake for about 40 minutes.
Let cool and then enjoy!
The smell will take over your house and the taste….well it’s really good and super moist!
