Having vegetables just sit in your fridge is never a good thing. I’ve have cauliflower and parsnips in my fridge for almost a week so I thought why not make something with them. Cauliflower & Parsnip Cheese Puree is what I came up with and it was really good…it pairs great with any pork dish as well!
Ingredients: 1 head of cauliflower, 4 parsnips, 1 clove elephant garlic (crushed), 1 1/2 cup milk, 1 Tbsp butter, 1 tsp salt, 1/4 block romano cheese (shredded), and 1/4 cup shredded parmesan
Take a medium sauce pan and fill with water, salt, garlic and the vegetables. Bring to a boil until nice and tender.
In a blender place the butter and cheeses.
Once the vegetables are nice and tender, add to the blender and blend until nicely pureed.
This puree was great and even my boyfriend really liked it! It’s great for anybody who is gluten free as well.
