Ice Cream Cake

A couple months ago, my friend/co-worker asked me to make her birthday cake and I of course said yes. It took me a month to figure out what cake to make. Tiramisu? Chocolate? Marble? In the end I decided on an ice cream cake. Homemade ice cream, homemade cake, ice cream frosting, etc…

Requires Ice Cream Maker

Ice Cream: 1 cup heavy whipping cream, 1 cup sugar, 1 Tbsp peppermint extract, 3 drops green food coloring, and 1 row of oreo’s (crushed)

Place ice cream bowl in freezer (if you have that type of ice cream maker).

Mix together all the ice cream ingredients and chill in the fridge for about 24 hours.

Line a cake pan (the size of the cake you plan on making) with plastic wrap.

Once the 24 hours are up, make the ice cream. The last 5 minutes add the crushed oreo’s. Once the ice cream is made, pour into your prepared pan and place in the freezer over night.

Buy 2 cartons of vanilla ice cream for the icing.

Cake: 2 sticks of butter (room temperature), 2 – 1/2 cups of sugar, 2 – 3/4 cups cake flour, 2 tsp baking soda, 1/2 tsp baking powder, a pinch of salt, 1 cup coco powder, 1 cup boiling water, 4 eggs, and 2 tsp vanilla extract 

Heat oven to 350 degree’s.

Mix together the flour, baking soda, baking powder, and salt.

Mix together the coco powder and boiling water.

Cream together the butter and sugar. Add the eggs one at a time, beating well after each addition. Next alternate between the flour mixture and the coco mixture and add to the creamed mixture. Lastly add the vanilla.

Pour an equal amount of batter into the pans and bake for about 20 – 25 minutes. Let cool.

Time to assemble!

Place one layer of cake for the bottom. Place the ice cream in the middle and top it off with the other cake layer. Place in the freezer for about 2 hours.

In the last half hour, take out ice cream you bought from the store and let melt enough that it is spread able.

Spread 1 tub of the ice cream on the cake. Stick back into the freezer for 24 hours.

The next day, take the second tub of ice cream and let melt for a half hour. Then spread over the cake and fix whatever you think needs to be fixed so that the cake look nice!

You know this is the first ice cream cake I have ever done and I think it turned out pretty well. Of course I still need to perfect it but not bad for a beginner.
