Cornbread Muffins

I have a MASSIVE ITCH for BBQ. I can not wait till summer no longer! Pulled Pork, Cornbread, BBQ Ribs, Grilled Chicken, just anything that can be grilled. I have never had a BBQ itch in my life. But I kind of life it because that means summer is coming (even though I’m a Fall person).

Ingredients: 1 – 3/4 cups corn meal (food processed as much into flour form), 3/4 cups sugar, 1/4 cup shortening, 1 – 1/2 cups flour, 2 tsp baking powder, 3/4 tsp salt, 1/4 tsp baking soda, 2 eggs, 1/4 cup buttermilk, 3/4 cups whole milk, 1/3 cup vegetable oil, 4 Tbsp Agave Nectar, , and 1/2 tsp vanilla.

Pre-heat oven to 400 degree’s.

Mix together the corn meal, flour, baking soda, baking powder, and salt.

Cream together the shortening, sugar, and eggs.

Add the dry ingredients to the wet and add the rest of the ingredients and mix until there are no lumps.

Line the cupcake baking sheet with cupcake liners and pour the batter 3/4 . Bake for about 18 minutes.

As soon as the muffins come out of the oven, take a cold stick of butter and rub the tops of the muffins until a glaze forms.

I actually just started liking cornbread this past week. And this recipe is amazing!
