The snow has finally come and it is officially winter! So we have this chili at my work and it’s good, hearty, and spicy and I thought, well I’m gonna make my own chili. I thought long and hard on what I was going to put in my chili and well it’s turned out amazing.
Ingredients: 1 Lb ground buffalo meat, 1 andouille sausage link (cut in half and chopped), 2 cloves or garlic, 1/4 cup olive oil, 1 small yellow onion, 1 tsp cumin, 1 tsp cayenne powder, 1 tsp chipotle powder, 1 tsp dried basil, 1 tsp dried oregano, 1 tsp dried marjoram, 2 tsp salt, 1 tsp smoked paprika, 2 jalapenos (seeded and chopped), 1/2 a serrano pepper (seeded and chopped), 4 qt’s chicken stock, 1 can tomato paste, and 2 cups tomato sauce.
Toppings: Cheese, and sour cream
First in a stock pot heat up the oil, then add the buffalo and cook, add the onion and garlic and sweat. Next add the andouille, jalapenos, and serrano. Mix together. Add the tomato paste and stir until all is incorporated. Add the salt, cumin, cayenne, chipotle, oregano, basil, marjoram, and paprika and stir. Finally add the tomato sauce and chicken stock. Bring to a boil and then simmer for about 15 minutes or until the chili becomes nice and thick.
Finally top off with cheese and sour cream.
In the past I didn’t think I liked chili because growing up, chili always had beans in it. But in actuality, chili doesn’t have beans in it.
This chili isn’t over powering with heat. You can tell it’s there but it’s not like it’ll make you sweat! It’s great for snowy days like today.
