Cornish Game Hens

I’m in charge of Christmas dinner this year and for the main dish I decided that we were going to have Cornish Game Hens. You can stuff a Hen with so many things and I decided to stuff the Hen with a ricotta cheese mixture.

Ingredients: 9 cornish game hens, 1 egg, 2 Tbsp oregano, 2 Tbsp basil, 1 Tbsp marjoram, 1 Tbsp salt, 1 Tbsp pepper, 1 Tbsp granulated garlic, and 32 oz of ricotta. 3 cups olive oil, 3 Tbsp salt, and 3 Tbsp pepper.

Set oven to 375 degrees

First mix together the oregano, basil, egg, marjoram, salt, pepper, garlic, and ricotta. Next stuff each hen with an even amount of the mixture. Dress the hens and then cover them with the oil, salt, pepper, mixture.

Roast the hens for about an hour and a half.

The hens wont be dry but savory and delicious! I don’t think I have ever made a dry chicken/hen and I don’t intend to start now!
