Pumpkin Bread

It is so close to halloween and what better to make then pumpkin bread! I’ve been wanting to try this recipe for a while now and I think I have gotten it to work. It has all my favorite spices mixed with pumpkin puree. The batter tastes great so the bread should too. This is my favorite month (not only because of my birthday) but because of the smells, cold weather, colorful leaves. I mean I would love to live in Halloween Town everyday.

Ingredients –

Bread: 3 eggs, 1 cup canola oil, 2 cups sugar, 1 Tbsp vanilla, 1 tsp salt, 1 1/4 tsp cinnamon, 1/2 tsp chinese 5 spice, 1/2 tsp all spice, 1/2 tsp nutmeg, 1 tsp baking soda, 1/3 tsp baking powder, 3 cups sifter flour, and 2 cups pumpkin puree

Filling: 3 blocks softened cream cheese, 1 tsp vanilla, and 1 cup powdered sugar

Heat oven to 325

In a mixing bowl, beat the eggs until they become frothy. The gradually add the other ingredients in the order they are listed.

In another mixing bowl, mix together the filling ingredients.

Make sure 2 bread pans are sprayed. Pour a quarter of the batter in each pan. Scoop the filling mixture evenly between both pans and top with the rest of the bread mixture. Place the bread pans on a sheet pan so the bottom of the bread doesn’t burn. Then place in the oven and let cook for about 1 hour.

I love pumpkin bread so much! And it goes great with a cream cheese filling. This recipe is moist, delicious, and probably wont last a day in your house. Also it makes the kitchen smell amazingly great!
