In my pastry class we are preparing for an event that is tomorrow. We have a vegan dish that we have to do because the people who are the main purpose for the event are vegan. So one group in my class made baklava. We thought we needed a vegan sauce to go with the baklava so since I got so good at making caramel sugar and caramel sauce I was chosen to help out this group.
Ingredients: 4 cups sugar, 1 cup water, 1/2 cup corn syrup, 1 pint silk soy creamer, and 2 sticks of earth balanced vegan butter.
First in a large sauce pan combine the sugar and water. DO NOT STIR!! Bring to a boil, while brushing the sides of the pot with a pastry brush and water as to not have crystallization on the sides of the pan. Once the sugar/water mixture has come to a caramel color, add the soy creamer and butter. Mix until all is combined and place in an ice bath to cool.
Now if you want more of a chewy caramel and not so much of a sauce, add half of the soy creamer.
Vegan dishes are sometimes gross to some people, but I’m the type of person who likes weird things to eat so I like vegan foods.
