Pumpkin Pancakes

Well it’s my favorite time of the year….OCTOBER and of course FALL which means lots of pumpkin flavored food! Today I decided to make pumpkin pancakes because one: I walked upstairs and felt like I wanted pancakes and second: I looked in the fridge and found pumpkin puree. So I made my pancakes from scratch and man are they good!!

Ingredients: 1 cup pumpkin puree. 1/4 cup sugar, 1 tsp cinnamon, 1/2 tsp chinese 5 spice, 1/2 tsp nutmeg, 1/2 tsp all spice, 2 cups milk, 2 cups flour, 1 egg, and 1 tsp vanilla.

First heat up the fry pan with 3 Tbsp oil.

In a large bowl whisk the egg. Add the pumpkin puree and spices. Whisk in the milk and then the flour little by little. (if too soupy add more flour, if too thick add more milk). Add the sugar at the very end with the vanilla. Then scoop the size of the pancake you want into the fry pan and cook.

This recipe is simple. I didn’t add baking powder this time because they puffed up to the size I like, but if you would like a more fluffy pancake add about 1 tsp baking powder.
