Alright, well I’ve been thinking lately about food that I haven’t had since I was a little kid. And I wanted something with apples so automatically I thought…Apple Dumpling! The warm apple, the sweet sauce and the pastry all baked together and topped with vanilla ice cream. It’s the perfect dessert for those cold nights and you want something comforting. Well the weather may not be cold (I seriously wish it was though) but dumplings just sounded really good.
Yields 4 dumplings
Ingredients: 2 pie crusts(cut in quarters), 3 apples (sliced), 1/4 Tbsp butter , 1/2 tsp cinnamon, 1/8 tsp chinese 5 spice, 1/8 tsp nutmeg, 1/4 cup brown sugar, and 1/8 cup sugar
Sauce: 1.5 cups water, 1 cup sugar, 1/2 tsp vanilla, and 1/8 cup butter
Heat oven to 400 degrees.
Mix together the brown sugar and 1/8 cup of white sugar. And mix together cinnamon, nutmeg, and 5 spice.
Spray an 8×8 glass pan.
Cut the pie crust in quarters. On one quarter, place 5 apple slices. Place 1 tsp of butter on top and top that with brown sugar and white sugar mixture. On top of the sprinkle a little bit of the cinnamon-nutmeg-5 spice mixture. Dab your index figure in water and wet the edges of the pie crust. Top with another section of pie crust and fold until all areas are sealed. And place in the pan.
Grab a sauce pan now. Mix all the sauce ingredients together and bring to a boil over medium heat. Boil for about 5 minutes until the sugar is completely dissolved or you can wait till it hits caramel color. Pour over the dumplings and then place that in the oven and bake for about 50 to 60 minutes.
After the dumplings are baked, Place each one in a dessert bowl with a scoop of ice cream and scoop some sauce from the pan over both. Enjoy!
