Alright, this week I was thinking about cupcakes. I was going to do my red velvet cupcake recipe, but then I thought about peanut butter and chocolate. So I decided to make Peanut Butter Cupcakes with Chocolate Buttercream Frosting. And let me say….they tasted fantastic!
Cake: 2 sticks of butter (softened), 2 cups sugar, 3 cups sifted Cake Flour, 4 eggs, 1 cup whole milk, 3 tsp baking powder, 1/4 tsp salt, 1 tsp vanilla, and 18 oz of creamy peanut butter.
Frosting: 6 cups confectioners sugar (powdered sugar), 2 sticks of butter, 6 Tbsp milk, 2 tsp vanilla, and 4 oz unsweetened chocolate (melted)
Heat over to 350 degrees.
In an other bowl combine the sifted flour, baking powder, and salt.
In a large bowl or mixer cream the butter. Slowly add the sugar. Crack one egg at a time until each is combined thoroughly. Add the vanilla. Slowly add the flour mixture (alternating between that and the milk) until blended together. (Note: do not over mix as the cake will become dry) Lastly add the peanut butter.
Prepare cake pan or cupcake pan as needed. Cook for about 20 minutes or until golden brown on top.
Once the cupcakes/cake has cooled, in a large bowl make the frosting.
First mix together the powdered sugar, butter, milk, and vanilla. Lastly add the melted chocolate. When the frosting is all mixed together, frost the top of the cupcakes/cake.
This was a great experience. The cake turned out amazingly moist and tasty!
