Ok, so people ask “what is a Gourmet Grilled Cheese?” Well in my version it’s a grilled cheese that is doctored to be fancier then a normal grilled cheese. My version technically has 5 different types of cheese if you include the 3 in my pesto recipe (an earlier post). Also my version has chicken on it. I guess you could say technically it’s a panini, but think about it…isn’t a grilled cheese a panini in itself?
Ingredients: 1 personal ciabatta bun, 3 mozzarella medallions, 1 Tbsp goat cheese, 1 chicken breast, and 2 Tbsp pesto (see earlier post about pesto)
First cook the chicken (grill it, saute it, bake it, whatever you feel like). After cut into small strips.
Heat oven to 375 degrees.
On the bottom side of the bun, spread the goat cheese and on the top side, spread the pesto. Place the chicken on the goat cheese then place the 3 medallions of mozzarella on top. Keep the top bun separate on the baking sheet so the mozzarella can melt a little bit in the oven. Once the mozzarella starts to melt, place the top bun on top and cook for 5 minutes longer.
Ciabatta is a great bread for things like grilled cheese because it offers that crunch that most breads don’t give you and all that cheese doesn’t over power the bread or the chicken, it’s just great! Also if this dish didn’t have goat cheese on it, it would be a full Italian grilled cheese, but it does have some French influence.
