I am currently on a diet. I want to be down to 130 pound before school start again and so far it’s working. I’ve lost 4.7 Lb’s in 1 week. So this recipe goes out to those people who are on diets. It’s fast, easy, cheap, and amazingly delicious!

Ingredients: 1 chicken thigh or breast (which ever you prefer), 2 oz of zucchini cut into long strips (like noodles), 2 oz of carrots cut into long strips (like noodles), 1 oz somen wheat noodles, 1 quart chicken stock, 1 tbsp smoked paprika, 2 tbsp singapore seasoning, and a drizzle of olive oil.

Pre heat oven to 400 degrees.

Coat the chicken in the paprika and singapore seasoning and place on baking sheet. Drizzle on the olive oil and bake for about 30 minutes.

Bring the chicken stock to a boil once the timer on the chicken hits 5 minutes. Add the zucchini and carrots. Cook for about 3 minutes, then add the somen noodles and cook for 2 minutes. Drain stock.

Cut chicken into lil pieces and mix into the vegetable noodle blend.

This dish is so good. It’s filling, tasty, colorful. I mean what more could you want in a dish of food?!
