Vanilla Strawberry Cheesecake

I was flipping through the channels and of course I go to the food network channel and Paula Dean was eating some sort of cake. Then I got a craving for something creamy and I thought “I’m going to make a cheesecake!” So after work I went to the store bought the ingredients. But this isn’t just any ordinary cheesecake. I’m using Mascarpone cheese instead of cream cheese. It’s kind of the same recipe as a regular cheesecake but a little different.

Ingredients: 2 cups ground graham crackers (honey), 2 (8 oz) mascarpone cheese, 1 whole can of Dicksons Vanilla Curd, 1/2 a cup of melted butter, 2 eggs, and 1/3 cup sugar. 2 box’s of strawberries sliced.

Set oven to 400 degrees.

In a mixer mix together the cheese, egg, curd, and sugar. In a separate bowl, mix together the butter and graham crackers. In the spring form pan spray with none stick spray. Coat the pan with the graham cracker mix. Add half of the cheese mix. Place half the sliced strawberries on top of the cheese mix then cover them with the rest of the cheese mix. Cook for about 30 minutes then turn the temperature down to 350 and cook for about another 30 minutes or until the top if golden brown.

Let cool to room temp.

Place the rest of the sliced strawberries on top of the cake in a design you like.

Place in the fridge until the cake sets. Afterward cut and ENJOY!

This cheesecake was lighter then a normal cheesecake and the taste of the strawberries stood out.
