I’ve had the craving for pulled pork for a while since the weather has been really warm lately. And since my brother in law made a smoker of his own, he said i could use his. But since I was at a work study for the new menu I couldn’t pull the pork so I just made pork sandwiches. But over all it turned out really good. I even made a sweet bbq sauce for it!
Pork rub: 4 Tbsp smoked spanish paprika, 2 Tbsp chipotle, 1 Tbsp salt, 1 Tbsp pepper, 1 tsp granulated garlic, 1 Tbsp cumin, 1 Tbsp coriander, 2 tsp cinnamon, 3 Tbsp brown sugar (depending on how large the pork is that you use, make more)
BBQ Sauce: 1cup white vinegar, 2 Tbsp butter, 3 garlic cloves (minced), 1/2 a small onion (minced), 1 6oz can of tomato paste, 3 Tbsp brown sugar, 8 oz of pineapple juice, a sprinkle of red pepper flakes, 2 tsp smoked spanish paprika, 2 tsp cayenne pepper, 4 tsp molasses, and 1/4 tsp pepper.
So an hour or so before you smoke the pork put the dry rub on it. Then place in the smoker and cook for about 4 hours.
While the pork is on the smoker, make the sauce. In a sauce pan melt the butter then place the garlic and onion and saute until soft. Add the vinegar and tomato paste and bring to a boil. Turn down the heat to low and add the rest of the ingredients. Once all ingredients are incorporated, keep the heat on low and reduce the sauce by 1/2.
Now like I said I didn’t pull the pork like I planed but either way it turned out great! So grab some bread. slice that pork and make a sandwich and add the sauce at the end!
The pork had levels of flavor that intensify as you eat. And with the sweetness of the sauce, it cools down just a bit.
The pork was tender and juicy and it makes you want to not stop eating it!
