For some odd reason I had the biggest taste for quiche. I don’t really eat eggs but I really just wanted quiche! So I made one!
Crust: 1/2 cup shortening, 2 cups flour, 1/4 cup ice cold water
Filling: 3 chicken breasts cut into cubes, 1 small bag of broccoli florets, 1/2 a bad of bacon, 2 oz pecorino and parmesan cheese mix, and 5 eggs mixed with 2 cups milk
First mix together the crust ingredients until a dough forms that is elastic. Cover with plastic wrap and place in fridge for 1/2 an hour.
Pre heat oven to 400 degrees
Next saute the chicken, steam the broccoli, and cook the bacon.
Take the dough out of the fridge and unwrap. Place on another piece of plastic wrap and place another piece of plastic wrap on top and roll out the dough until it’s an 1/8 of an inch thick. Take off the plastic wrap and place in a pie dish. Par bake in oven for 15 minutes.
Take the pie dough out of the oven and fill with the filling ingredients. Take the cheese mix and sprinkle over the filling. Pour the egg and milk mixture over the pie and place in the oven until golden brown or about 1/2 an hour in the oven.
The quiche was really good and I enjoyed it, but don’t ask me why I really wanted to make it because really, I just had a sudden craving for it.
