Today I was watching Throw down with Bobby Flay, and the match was about Fajitas. And it got me thinking that I haven’t had fajitas in a long time and they looked really good, so I made some tonight.
Steak ingredients: 1 skirt steak (cut in half), 1 cup apple cider vinegar, 3 Tbsp white pepper, 3 Tbsp salt, 1.5 Tbsp cayenne, 1.5 Tbsp granulated garlic, 1.5 Tbsp granulated toasted garlic, and 2 tsp chili powder
Rice ingredients: 1 cup rice (cooked), 1 Tbsp tomato paste, 1 tsp chili powder, 1 tsp granulated toasted onion, and 1 tsp black pepper
Fajita tortillas and refried beans of course and with any other fixings you like with fajitas
In a baking pan, cover the steak with the cider vinegar on both sides. Mix together the dry ingredients for the steak together and sprinkle on both sides of the steak. Marinade for at least 7 hours or over night. (The vinegar will make the steak really tender). Cover the pan with plastic wrap and tin foil and place in fridge.
Start heating the grill.
Before you cook the steak on the grill. Cook the rice like you normally would. Once cooked, scoop into a separate bowl and let cool for 5 minutes. Mix in the tomato paste. Lastly add the rest of the rice ingredients.
Cook the steak on the grill, 5 minutes eat side. Once the steak is fully cooked place on a cutting board and let rest for a couple minutes. Once about 3 minutes has past for the resting time, cut the steak on a bias in thin slices.
In a microwave heat up the fajita tortillas and then place in tin foil and let steam a bit.
Once everything is done. Start building you Fajitas!!!
