Bearnaise Sauce

So this morning I started thinking that eating sunny-side up eggs would be a good idea. And What goes best with sunny-side eggs? Well Hollandaise sauce of course but I decided to make a Bearnaise sauce.

Ingredients: 2 egg yolks, 1/2 a minced shallot, 1/2 cup melted butter, 3 Tbsp white vinegar, 1 tsp granulated garlic, 2 tsp cayenne pepper, 1 Tbsp smoked paprika, 1 tsp black pepper, and 1/2 tsp of french time

In a metal bowl whisk the egg yolks until emulsified (take on and off the heat of the stove until completely whisked). Slowly add half of the melted butter. The add the first Tbsp of vinegar. Add the rest of the butter and vinegar at the end.

In a separate pan saute the shallot until soft. Take off the heat and add to the mix. Add the rest of the ingredients.

Now you can either put this over an egg or over a steak. The choice is up to you!
