Oxtail Soup

So a while back I told my aunt that I had a craving for Oxtail Soup. So the next day she went out and bought a pack of Oxtails. And now that I am done with classes for winter break, I finally had time to make the soup.

Ingredients: 5 Oxtails, 1/2 a leek, 2 shallots, 2 carrots, 1 celery, 1/2 a pack of barley,  1 pack of beef stock, 5 cups of water, salt and pepper.

First brown the oxtail and then place in a crockpot and cover with water and cook for 3 hours.

Take out the oxtails and skim off the fat. Whisk the beef stock in the water. Take the meat off the bone and put in the beef stock water. Chop  up the vegetables and add to the mix then add the barley and mix all together. Add salt and pepper to taste.

Oxtail soup is really good. I like having it around winter months because it’s kind of a hearty soup because of the meat and barley.
