Pumpkin Log

So it’s that time of the month were I make a cake. And since it’s getting close to October I chose to make a Pumpkin Roll! Pumpkin is my favorite flavor of all time. Pumpkin Pie, Pumpkin cupcakes, Pumpkin Rolls. Anything that is a baked good and has pumpkin in it is absolutely off the chain!

Ingredients for roll: 3 eggs, 1 cup sugar, 2/3 of a can of pumpkin, 1 tsp baking soda, 1 tsp salt, 1/2 tsp cinnamon, and 3/4 cup flour. Also you’ll need a long towel for rolling.

Heat the oven to 375. Beat the eggs. Gradually add the sugar. Add the next five ingredients (Blend each ingredient in before adding the next). Next take a sheet pan and place some wax paper on it and grease the wax paper as well. Then spread the mixture onto the greased wax paper. Bake for 15 minutes. When done flip the cake onto the towel and roll up and let cool.

Filling: 1 – 2 packages of 8 oz cream cheese, a couple tsps of vanilla, and some sugar (this is all depending on how sweet you want it to be)

Cream all the filling ingredients together and unroll the cake and spread the mixture onto the cake and roll up again and put into the fridge.

History: So technically a log cake is called a Buche Noel and the French make it around Christmas.
