How amazing does homemade 4 cheese mac with bacon sound? It was so good!
What you need: 4 oz Fontina cheese, 4 oz mozzarella, 2 oz parmesan, and 1 oz Cheddar. 1/2 a stick of butter, 1/2 cup of flour, 2 cups of milk, oregano, basil, marjoram, white pepper, salt, and tabasco sauce. Bacon.
First make the roux: melted butter and the flour…cook on low/medium heat so that you don’t burn it at all. Then once you have a bubbly white mixture add the milk very slowly and stir with a whisk until everything is dissolved. Then wait for it to thicken which is right when it starts to boil. Then add the Fontina, Parm, and Mozzarella until all is melted and creamy (if the sauce becomes too thick because of the Mozzarella and becomes more like a gooey cheese add more milk). Then add the cheddar lastly. Turn off the heat. Add the oregan, basil, salt, pepper, and marjoram. At the very last moment add the tabasco sauce…as much as you would like depending on how much tabasco you prefer.
Fry up the bacon in a different pan and let cool. Cut the bacon into little pieces.
For the noodles, just grab a box and cook as directed. Then drain the noodles and add the cheese sauce and the bacon and mix all together & ENJOY!
